During our first visit, which lasted three days at the farm, we were introduced to their fermentation approach. What became clear is that their work with fermentation resembles our approach to roasting more than it resembles classic processing.

In short, they build fermentation profiles with the same care and precision that we build roasting profiles. They have a deep understanding of microbiological activity in coffee, and how it can be controlled and managed to unlock different flavours.
